Amazing Knife I recently purchased this knife for my birthday. Over the summer I worked in a 4 Star restaurant and got pretty handy with a knife. The knives that are used in restaurants are of great quality and sharpened on a regular basis. After becoming a fan of well-made blades, I decided to buy my own for home. I did a lot of research and finally decided on this J.A Henckels 8" Chef s knife. One of the reasons I decided on this knife was because I know that they are a favorite of world class chef Gordon Ramsey. I am so glad that I decided on this knife. The knife comes out of the package extremely sharp. I knew that I would eventually need to re-sharpen the blade, so I bought a sharpener with a fine and coarse setting. I used this knife daily on about everything you could imagine, and it held its edge extremely well. It wasn't until about after a month of constant use that I noticed the edge to dull a little bit. It was at that point that I used my I.Q. kitchen blade sharpener on it. The blade turned out to be as sharp as new. Overall, the blade is extremely well made and holds its edge very well. I would suggest the purchase of a quality blade sharpener so that you can keep your knife in brand new condition. The handle of the knife is also very well made. It is very well balanced and fits in my hand perfectly. It feels as though the blade is just an extension of your hand, that is how well constructed it is. My girlfriend with much smaller hands than mine also finds that it is extremely comfortable for her to use. I think that the material used on the handle is also very comfortable to hold. It his great grip and is also very easy to clean. I never put my knife in the dishwasher and that helps maintain sharpness. I clean it with a sponge and dish soap and it cleans very well. It is also rust resistant, so I am able to let it air dry. This is the perfect knife for someone looking for a quality chef s knife at a reasonable price. I am extremely happy with my purchase and I will be purchasing a full set in the future. 4Great knife for the home cook I am in the process of replacing my 45 year old Ekco Arrowhead knives that have finally given up on keep a sharp edge. They were essentially made from tool steel reinforced with vanadium and they served me well for decades but I should started to replace them long ago. When I started to look for new knives I wanted a premium brand and then I went into sticker shock. Also I had to be rational, I'm 69 so did I really need upper end cutlery? Of course I didn't but I still wanted decent knives so the Henckles International Classic series was in my price range and I am not disappointed with them. They are much lighter than the Arrowhead knives because the blades are thinner. This is not a bad thing since they are forged although from stamped steel hence the lower price. A hollow ground version would have been nice much like the santoku knife I purchased with this one (read my review on that knife) to get a thinner slice but it does cut exceptionally well and I am very pleased with it and at an affordable price. 5... bought this 2 years ago and it's still working beautifully. I bought a the 9 inch sharpening rod ... I just realized that I bought this 2 years ago and it's still working beautifully. I bought a the 9 inch sharpening rod and a "cover" for it and still works like new. 5Very sharp. Very sturdy Bought this at end of 2017. Had my other one since 2008. The older one had half of the handle break off after it was dropped (too many times). The new one arrived very sharp. I have a bandaid on my ring finger to prove it! It's nice to have a new one again. Makes quick work of my cutting and sharpens well. I use the JA Henckles hand sharpening tool that came with my set. 5Decent edge, awful finishing It cuts well, but I'm afraid that's the only thing this knife has going for it. Don't get me wrong, if you're looking for an upgrade, this knife would be a good candidate from the cheaper ones. It's got a nice weight to it, and it's sharp. Unfortunately, the grip is just awful! Doesn't feel too good in the hands, and I ended up cutting my finger with the SPINE of the knife--not the blade! Like other posters have said, they really should have grinded down the spine. Overall, it's a knife. If you're looking for an upper-tier knife, this knife would not be in that last. Buy as an upgrade, not as a complement to the other knives you might want in your knife repertoire 3Highly recommended 6" stain-resistant carbon steel that's hot drop forged (not stamped). Full length tang. Very strong blade holds the edge well. Should be hand washed as with most knives. This has become the go-to knife in our kitchen for "small projects". It's easy to handle and well balanced, but you'll still want to keep a larger blade around for big cuts of meat etc. While this works for veggies, the veggie knives with non-flat surface keep the slices from sticking and are also recommended. 5Great Henckel knife, with a caveat** Great Henckel knife, with a caveat**Henckels makes great knives - except when it comes time for warranty work. But aside, this is a great knife. Well balanced, great steel, handle has amazing fit into my hands. Upon inspection, the knife is not made in Spain as advertised, but in China. The Henckels 'Classic' lines is transitioning into Asian markets for their knives. This advertiser posted pics stating their knives are 'Made in Spain'. My collection of Henckels are all Spanish knives. So I was a bit disappointed the advertiser did not tell me the truth about where the knife was truly made.I wish this retailer would have been honest, because their pictures of their product was blatantly ....*** 4But seriously? I'm not a chef by any stretch but I cook a lot and really weighed this version vs the professional series one. I am pretty disappointed. I have the 6" chef's knife of the professional series and it is light weight, smooth and cuts through meat and veggies like butter. I wanted a bigger more versatile one but didn't want to spend around $200, so I picked this one based on the reviews. This knife is significantly heavier than the professional series but more importantly, it is very textured. I'm not sure the customer who is looking for a knife that grips food instead of slicing nimbly through it but this is your knife. If your problem is slippery food that gets away from you and food prep is a journey not a destination, this is a sure bet. Or, if you've only used butter or steak knives for food prep, you will not be disappointed. 3Excellent value; perfect for the home chef When you're shopping for a chef knife, the sky really is the limit. You can get anything from a cheap discount knife from your local department store to a hand-forged knife with a diamond-studded handle. I'm not a professional chef, but I like to fancy myself a pretty good home chef, and I was looking for a knife that would hold up against the culinary challenges I might throw at it without breaking the bank. I honestly feel like this might be the best value knife for that purpose. It's extremely sharp, has a nice weight, and fits my hand like a glove. I've been loving every minute of working with it so far, and I'm looking forward to using it for many years to come.To test it out, I put it through some serious paces. I had absolutely no problem cutting meat, carrots, or asparagus. It slid through my onions and potatoes like a hot knife through butter. I was able to chiffonade basil with only the slightest of bruising. A top-shelf knife might have done better on such delicate herbs, but I've never seen anything do as well at under $50.If you're a chef on a budget or perhaps a beginning chef looking to graduate to a real instrument as opposed to the dull discount-store knives you've been working with up until now, I really can't recommend this knife highly enough. I would imagine even professionals would be happy to use it. Treat it well and keep it sharpened and you'll have a wonderful tool in your kitchen for many years to come.Note: the manufacturer says it's dishwasher safe, but I don't recommend putting any good knife in the dishwasher, so I can't comment on how it holds up under those conditions. Note also to beware: this review is for the forged knife. I noticed that the 3-piece knife set linked to this knife's page on Amazon is the stamped version. 5worth every cent! I actually use this knife more than my wustof I paid 3x as much for (I got this on sale!) It's a very sturdy blade and I have not even sharpened it once since I got it two years ago because the blade is stiff that it only needs to be rubbed on a steel. I rarely grab other knives because I know this will be reliable. Best 30 dollars kitchen product I've ever purchased. 5
